This recipe is great for the holidays and can
accompany any pork, chicken or turkey dish.
Makes 4 cups
Serves approximately 12 - 15
Combine and simmer 5 minutes to plump:
1/2 cup dried apricots
1/2 cup dark brown sugar
1/2 cup golden raisins
1 cup apple juice (or to cover)
Add and simmer 10 minutes or until cranberries
pop:
3 cups+ cranberries
1 apple (peeled and diced)
1 orange (seeded and chopped)
Add 1/4 cup candied ginger and simmer 3
- 5 minutes.
