4 bunches of arugula (clean thoroughly)
12 sundried tomatoes
1/4 to 1/2 lb. goat cheese
1/4 cup red wine vinaigrette
1 charred onion
3 marinated tomatoes
Add the red wine vinaigrette
to the pan and bring to a simmer. Add the sundried
tomatoes and goat cheese. Pour over the arugula
and mix well. Serves four.
