Cajun Shrimp Chowder (multiple serving)
McCormick® ingredient: OLD BAY Seasoning

Zesty OLD BAY adds just the right spice -- your customers will love the heartiness of this soup.

Ingredients:
3/4 cup olive oil (trial recipe: 3 tbsps.)
4 medium green peppers, chopped (trial recipe: 1)
4 medium red peppers, chopped (trial recipe: 1)
12 stalks celery, chopped (trial recipe: 3 stalks)
4 large red onions, chopped (trial recipe: 1)
12 cloves garlic, chopped (trial recipe: 3 cloves)
64 oz. crushed canned tomatoes (trial recipe: 16 oz.)
2 cups red cooking wine (trial recipe: 1/2 cup)
2 cups water (trial recipe: 1/2 cup)
6 tbsps. OLD BAY Seasoning (trial recipe: 1 & 1/2 tbsps.)
1 tsp. McCormick®/Schilling® Cayenne Pepper(trial recipe: 1/4 tsp.)
2 tsps. salt(trial recipe 1/2 tsp.)
1 & 1/4 tbsps. McCormick®/Schilling® black pepper(trial recipe 1 tsp.)
6 lbs. medium shrimp, peeled, deveined and chopped (trial recipe:1 & 1/2 lbs.)
green onions chopped as needed (trial recipe: as needed)

Method:

1. In a large pot, heat olive oil.
2. Add chopped peppers, celery, onions and garlic to hot oil. Sauté until tender, about 5 minutes.
3. Add the crushed tomatoes, wine and water to the cooked vegetables. Bring to a boil.
4. Add the OLD BAY Seasoning, cayenne, salt and pepper to the pot and blend. Cover and simmer for 35 minutes, stirring occasionally.
5. Add the shrimp, cover the pot and simmer for 5 minutes. Remove from the heat.

Yield:
25 servings
